Ghee Roast Chicken

This is one of my favorites. One of the first dishes that I learnt to prepare.. of course egg omelette and Maggie might not count as a full fledged dish according to many, in which case Ghee Roast chicken would be my third lesson in cooking.

After my colleague ranted about the awesomeness of Ghee Roast Chicken that he had had in a nearby sea food restaurant (yup I know how some of you may be wondering why would someone have chicken at a sea food restaurant for which there could be some explanations one of them being that some people can't simply not get enough of chicken) I happened to go there for one a tasting session and boy I was so unimpressed. That inspired me to write about how to prepare a yummy dish that would truly inspire you to close your eyes and relish the simple flavors. Well I learnt this from my mother which probably makes it all the more special. The ingredients required for this are very simple and locally available. I like it spicy so you may choose to moderate the spice according to your tastes.

Ingredients:-

1. Chicken (skinned)- 1 Kg - Cut into medium size pieces
2. Onion- 3 Big Ones - Sliced them into thin pieces (long slices)
3. Chilly Powder- A mix of Kashmiri Chilly powder (3 Tablespoons) and normal chilly powder (1 spoon)
4. Turmeric- I teaspoon
5. Ghee - 3 Tablespoon
6. Salt to taste
7. Water

How to prepare:-

1. Rub the chilly, salt and turmeric on the chicken and allow it to marinate for at least half an hour (the more you marinate, the better it tastes)
2. Take a heating pan that is deep in the middle and add the marinated chicken and keep it on the stove (don't forget to light the stove :-P)
3. Add water that is required to cook the chicken- (Note that chicken will release water on its own and therefore, you may choose to add water in small quantity)-
4. As the chicken cooks (you can check if it has turned white inside) remove the pieces from the pan and keep it aside.
5. Add the onion slices to the gravy in the pan and keep stirring it till it reaches a soft consistency.
6. Add ghee to the mixture and cook for a minute
7. Add back the chicken pieces into it and stir for 3 minutes.

You have the Chicken Ghee Roast ready. You may choose to garnish it with coriander leaves or curry leaves although strictly speaking, it is not necessary. It is best had with Appam, Neer Dosa or Chapathi...
